roasted veggies (brussels/shallots/squash) for salad 300 cal. (most of the calories are in the olive oil they were roasted with)
total calories 1440
Add in morning coffee, 2 more persimmons, 200 cal,(I can't help but take free persimmons, and eat them while in season!), misc. dried fruit, 200 cal) and when I got home late from my day I treated myself to an ice cream/yogurt combination at around 500 cal. I didn't get around to eating my soup for the day so subtract the 400 cal.
Total just under 2000 cal.

Tracey, I just bought and ate a Hachiya persimmon today (my first ever) and the inside was really nice but when I ate some of the outside flesh it was mealy, chalky and a little bitter. Am I supposed to eat the peel?

I'm not familiar with the names of the varieties of persimmons, but the two I know of, one is eaten soft and one is eaten hard.
Some people do not eat the skin of either, however I eat the skin of the hard variety (these are smaller in size than the soft). The soft variety ( I had in my yogurt a couple of weeks ago), I do not eat the skin, I just scoop out the inside.....this is also the variety you would use to bake with, persimmon cookies and cake, (and you can freeze the pulp).
Keep trying new things! One of the nice things about buying at a Farmers Market is that you can ask the growers, directly, about their produce.
